JOB RESPONSIBILITIES

  • Lead the stewarding team to maintain a clean, safe, and organized back-of-house environment
  • Supervise the cleaning, sanitizing, and storage of all kitchen utensils, equipment, and serviceware
  • Ensure back-of-house areas (kitchens, pantries, and warehouses) meet the highest hygiene standards and comply with local food safety regulations (e.g., HACCP or equivalent)
  • Coordinate with the Executive Chef and outlet managers to ensure smooth kitchen and banquet operations
  • Manage inventory of cleaning supplies, chemicals, and kitchen equipment, ensuring proper usage and cost control
  • Prepare work schedules, performance evaluations, and training plans for the stewarding team
  • Responsible for Sustainability Management involving waste sorting and management, reducing plastic use, and monitoring the energy efficiency of washing equipment
  • Monitor pest control activities with external contractors and report any issues promptly
  • Supervise overnight deep cleaning or special projects as required
  • Perform ad hoc duties as assigned by superior or Hotel Management

KNOWLEDGE & EXPERTISE

  • Diploma or certificate holder
  • Minimum 7 years of stewarding experience preferably in large-scale F&B operations, with at least 3 years in a supervisory or managerial role
  • Strong knowledge of chemical handling, sanitation guidelines, and hygiene management
  • Holding Food Hygiene Manager Certificate highly preferable; holding First Aid Certificate or relevant industry safety certifications advantageous
  • Excellent leadership, communication, and organizational skills
  • Proficient in inventory control and cost management
  • Ability to support, motivate, and guide team members
  • Proactive attitude with strong attention to detail
  • Good command of spoken and written English & Chinese
  • Willingness to work flexible hours, including nights, weekends, and public holidays as required
