About the Role:
As Sous Chef, you will be the backbone of the hot kitchen, working closely with the Head Chef and sushi team to create refined, flavorful hot dishes that perfectly complement our signature omakase sushi experience. This is a hands-on leadership role in a small, dynamic team where quality and consistency are paramount.

Key Responsibilities:

• Prepare and execute a wide range of high-quality hot kitchen dishes including tempura, grilled items (robata), simmered dishes, soups, and other traditional & modern Japanese hot appetizers and mains.
• Maintain the highest standards of food quality, taste, presentation, and hygiene in line with Michelin-level expectations.
• Oversee daily hot kitchen operations, including mise en place, inventory control, and waste management.
• Collaborate closely with the sushi team to ensure seamless service during omakase experiences.
• Train, mentor, and supervise junior kitchen staff.
• Work with the Head Chef on menu development, seasonal specials, and ingredient sourcing.
• Uphold strict food safety and standards.

Qualifications:

• Minimum 5–7 years of relevant experience in Japanese cuisine, with at least 2–3 years in a Sous Chef or similar leadership role.
• Strong expertise in hot kitchen Japanese cooking techniques (tempura, yakimono, nimono, etc.).
• Experience in fine-dining or omakase/high-end sushi restaurants is highly preferred.
• Passion for Japanese cuisine and a keen eye for detail and presentation.
• Ability to work efficiently under pressure in a fast-paced, intimate restaurant environment.
• Good command of English and Cantonese (Mandarin is a plus).
• Valid Hong Kong work visa or right to work in HK.
