About the role:

It’s no secret that an exceptional culinary team is a key ingredient to our success, so we’re looking for a top-grade chef to join us as Chef de Cuisine. You will be working in close partnership with our Kitchen Team to build a kitchen you can be proud of. You’ll be leading and developing your team with empathy and encouragement, and, at the same time, bringing our bold culinary concepts to life. This role offers you the opportunity to be an integral part of an exciting hospitality brand born right here in Hong Kong – and we’d love to have you on-board!

What you need to have:

  • First-rate knowledge of kitchen management and menu planning with a strong operational skill set in the Italian-American Cuisine space
  • A proven track record in kitchen operations management in a similar capacity
  • Basic computer skills, especially in MS Office and Recipe Maintenance System
  • A strong sense of creativity, flexibility and innovation – we are a curious lot who are always seeking to challenge ourselves
  • Outstanding communication and interpersonal skills
  • Good leadership skills – you must be an effective communicator and experienced in delivering skills training
  • A team player that can motivate and guide others to realise their full potential

What you will do:

  • Ensure our culinary activities are aligned with the respective Corporate Strategy, with Club actions having been implemented where appropriate
  • Work on creative menu and recipe development, including analysing recipes, assigning pricing and reviewing overhead costs
  • Select and source fresh, seasonal ingredients in partnership with local and international suppliers
  • Estimate food consumption and manage the purchase/requisition of ingredients and kitchen supplies, within budget
  • Ensure every part of our dining service meets the Carlyle & Co. level of excellence – from food prep and cooking, to garnishing and portion size
  • Introduce and test with new products which are market-orientated in terms of price and product
  • Train the culinary team on recipes, cooking skills, kitchen operating procedures and Member service, enabling them to perform at the highest level and with the utmost productivity
  • Collaborate with key stakeholders across Carlyle & Co. to enhance our Members’ culinary experience
  • Interact with Members to obtain feedback and build positive relationships – don’t be shy, take a bow!
  • Represent the culinary team in the absence of the Executive Chef
