What you will do:
· To work with Outlet Manager / Hotel Head Sommelier to continually improve Outlet wine offerings.
· Through analysis of sales performance and profitability of existing wine lists, use wine knowledge to improve customer satisfaction and profitability by continuously improving the hotel’s International Wine List.
· To maintain a close relationship with all wine agents/importers, in order to secure first-hand option on special wines, available on limited quantities or allocations.
· To develop and recommend to the Outlet Manager / Hotel Head Sommelier, appropriate pricing strategies for the designated operation.
· Work with Outlet Manager / Hotel Head Sommelier to prepare wine promotional plans, including wine promotions, wine maker’s events, wine-by-the glass programmes and other related initiatives.
· Reviews all slow moving items and recommend actions, i.e. further cellaring, special promotions, bin-end sales, etc.
· Ensure that all service associates are fully versed in wine up selling techniques and have a good level of product knowledge.
· Create and manage the beverage program of the outlet and hotel by offering a selection suiting the restaurant concept and local market’s expectations.
