About the job

Based at the Mandarin Oriental, Hong Kong within Kitchen Department in Hong Kong, the Head Baker (Overnight) is responsible for assisting the Head Pastry Chef with the smooth running of the Bakery Section and in charge of bread / bakery products preparation, menu implementation and maintaining high food standards. The Head Baker (Overnight) reports to the Executive Chef - Terrace Boulud.

As Head Baker (Overnight) - Terrace Boulud, you will be responsible for the following duties:

  • In charge of the bakery section
  • Ensure various kinds of bread are produced and make sure that there is fresh daily produce
  • Proactively bring new and creative ideas of bread / bakery products to the Head Pastry Chef
  • Find ways to improve the efficiency of the operations that will benefit our clients
  • Maintain a high standard of cleanliness and sanitation in and around all culinary work areas and clean their stations after every service
  • Follow procedure and ensure safe and proper use of equipment at all times and to instruct this to all culinary associates
  • Adhere to all the standards of food handling, production, preparation, portioning and presentation.

As Head Baker (Overnight) - Terrace Boulud, we expect from you:

  • Minimum 8 years of Fine Dining restaurant experience in Michelin Starred. Experience in international 5-star luxury hotels is considered an advantage.
  • Creative and hands on
  • Strong leadership, communication and interpersonal skills, open mind of different culture, friendly, approachable and sociable
  • Motivational with enthusiastic character
  • Acquire good training and coaching skills
  • Independent and able to work under pressure.
