Based at the Mandarin Oriental, Hong Kong within Kitchen Department in Hong Kong, the Head Pastry Chef is responsible for supervision and coordination of the preparation and production of all pastries, chocolates as well as bakery items according to the highest standards. The Head Pastry Chef reports to the Executive Chef - Terrace Boulud.
As Head Pastry Chef - Terrace Boulud, you will be responsible for the following duties:
- Be responsible for the daily basic food preparation in Pastry and for delegating different sections to the Pastry Sous Chef and team
- Work closely with the Chef de Cuisine and management on new concepts and ideas, including conceptualizing spaces or venues and assist in Financial projections as needed
- Maintain good hygiene and cleanliness standards by closely working with Stewarding team and monitoring all HACCP related issues within the department
- Ensure the par stock of mise-en-place is maintained and monitor the par stock of packaging and food items
- Be responsible for the logistics of all food items for festive and special food promotions
- Be responsible and accountable for the departmental operating budget
- Maximize and increase sales and/or yield in revenue centre and improve the efficiency of the operations
- Propose and initiate new services and products for our guests, issue recipe cards and conduct spot check of end products for quality
- Consult clients directly (particularly for catering events) in the creation of menus as required
As Head Pastry Chef - Terrace Boulud, we expect from you:
- 10 years of experience in the pastry operations preferably in luxury hotel
- Acquire work exposure in Asia is an advantage
- Excellent food & beverage and menu planning knowledge
- Creative, multi-tasking and self-motivated
- Strong interpersonal skills and exemplary leadership skills
- Attention to details, well organized and responsible
- Computer proficiency in major software
