Sous Chef / Chef de Partie / Demi (Fine Dining Restaurant)

The Sous Chef plays a pivotal role in supporting the Executive Chef in managing the kitchen operations of a high-end fine dining restaurant. This includes ensuring culinary excellence, maintaining hygiene standards, and leading the kitchen team to deliver an exceptional dining experience.

Key Responsibilities:

  • Kitchen Operations: Assist the Executive Chef in overseeing daily kitchen activities, ensuring smooth workflow and timely service.
  • Food Quality & Presentation: Maintain the highest standards in food preparation, taste, and plating aesthetics.
  • Menu Development: Contribute to the creation and innovation of seasonal and signature menus.
  • Inventory Management: Monitor ingredient stock levels, place orders, and ensure freshness and quality of supplies.
  • Cost Control: Track food costs, minimize waste, and implement cost-saving measures.
  • Team Leadership: Supervise, train, and evaluate kitchen staff; manage schedules and delegate tasks effectively.
  • Compliance: Uphold food safety, hygiene, and sanitation standards in accordance with local regulations.

Requirements:

  • Good command of English and Chinese.
  • Minimum 4 years of experience at the same position in a fine dining Western restaurant; lesser experience will be considered as CDP.
  • Knowledge of all standard procedures and policies of food prep, receiving, storage, and sanitation.
  • Excellent use of various cooking methods, ingredients, equipment, and food processing methods.
  • Creative and quality-oriented Team player, working hard, good interpersonal and communication skills.
  • Immediate availability is strongly preferred.
