The Sous Chef plays a pivotal role in supporting the Executive Chef in managing the kitchen operations of a high-end fine dining restaurant. This includes ensuring culinary excellence, maintaining hygiene standards, and leading the kitchen team to deliver an exceptional dining experience.
Key Responsibilities:
- Kitchen Operations: Assist the Executive Chef in overseeing daily kitchen activities, ensuring smooth workflow and timely service.
- Food Quality & Presentation: Maintain the highest standards in food preparation, taste, and plating aesthetics.
- Menu Development: Contribute to the creation and innovation of seasonal and signature menus.
- Inventory Management: Monitor ingredient stock levels, place orders, and ensure freshness and quality of supplies.
- Cost Control: Track food costs, minimize waste, and implement cost-saving measures.
- Team Leadership: Supervise, train, and evaluate kitchen staff; manage schedules and delegate tasks effectively.
- Compliance: Uphold food safety, hygiene, and sanitation standards in accordance with local regulations.
Requirements:
- Good command of English and Chinese.
- Minimum 4 years of experience at the same position in a fine dining Western restaurant; lesser experience will be considered as CDP.
- Knowledge of all standard procedures and policies of food prep, receiving, storage, and sanitation.
- Excellent use of various cooking methods, ingredients, equipment, and food processing methods.
- Creative and quality-oriented Team player, working hard, good interpersonal and communication skills.
- Immediate availability is strongly preferred.
