Chief Steward

Responsibilities

• Oversees and directs all aspects of stewarding operation within the established policies and procedures
• Responsible for the schedule in stewarding and ensure right manning at the right time
• Ensure Back of House areas are maintained to the highest cleanliness and tidiness standards
• Responsible for implementing a detailed cleaning program as scheduled, monitoring the results of each action
• Co-ordinate with Food & Beverage and Culinary in ensuring all banqueting and restaurant operations function efficiently
• Coordinate with the Engineering department for the preventive maintenance system for exhaust, drainage, burners, fryers, refrigerators, freezers and other major equipment
• Take an active part in weekly front and back of house hygiene inspections
• Maintain and update the steward operating manual, chemical charts and cleaning chart
• Take periodic inventory and par stock maintenance for all operating equipment
• Take all necessary actions to reduce breakage of glassware and chinaware
• Demonstrate awareness of Food Hygiene & Safety, Occupational Health & Safety policies and procedures and ensure all procedures are conducted safely and within the guidelines
• Prepare annual food safety audit documentation and relevant records
• Educate and train team members in compliance with brand standards and service behaviour

Requirements

• A minimum of 5 years’ relevant experience in similar position in sizable hotels
• Food Safety Management System or sound knowledge of HACCP
• Good knowledge in steward operations, cleaning equipment and supplies
• Knowledge of chemical and sanitation guideline
• Strong communication, interpersonal and people management skills
• Good command of spoken and written English and Chinese
