About the role:

  • Ensures the smooth running of the Outlet Kitchen in accordance with the Club’s standards and financial goals.

What you will do:

  • Assists to ensure that culinary activities are aligned with the respective Corporate Strategy, and that the Club Actions have been implemented where appropriate
  • Assists in the preparation and updates of Departmental Operations Manuals
  • Ensures that all guest contact culinary associates deliver the brand promise and provide exceptional guest service at all times
  • Review menus, analyses recipes, determines food, labour, overhead costs and assigns prices to menu items
  • Directs food apportionment policy to control costs
  • Introduces and tests the market with new products which are market-orientated in terms of price and product
  • Checks incoming food products and ensures that all food merchandise is in accordance with order sheets and receiving records
  • Coordinates with all satellite kitchens for their mise-en-place and supplies
  • Observes methods of food preparation and cooking, sizes of portions, and garnishing of foods to ensure food is prepared in prescribed manner
  • Assists to devise special dishes and develop innovative recipes
  • Establishes and enforces sanitation standards for the kitchen

What you need to have:

  • Minimum 4 years work experience as similar position in a club, hotel or large restaurant, preferably with experience in luxury international brand
  • Knowledge and hands on experience in Kitchen management, menu planning and operational skills in Western / Banquet area
  • Good guest relations skills
  • Basic computer skills especially in MS Office, and Recipe Maintenance System.
  • Effective trainer, experienced in the delivery of skills training
  • Comprehensive knowledge of kitchen hygiene practices and occupational health and safety standards
