Responsibilities:

  • Manage day-to-day kitchen operations, including sanitation requirements and maintenance of kitchen equipment
  • Oversee food preparation by line chefs and kitchen porters
  • Manage all kitchen staff in your outlet
  • Plan menus with the Executive Sous Chef and Pastry chef
  • Execute the menu and guide your team
  • Forecasting volume of sales and scheduling the production process accordingly
  • Identifying staff requirements and employing enough staff
  • Assigning the right job for the right person to achieve the desired results
  • Controlling food, labor & costs
  • Verifying stocks and preventing wastage
  • Ensuring proper storage of ingredients, especially highly perishable ones such as fish, meat, poultry, cream, ice cream, and so on
  • Authorizing the indent prepared by subordinates

Requirements:

  • Solid work experience in hotel/clubhouse/catering industry 
  • Good knowledge of European food and culture
  • Good knowledge of HACCP 
  • Good communication skills in both English and Chinese
