Sous Chef / Chef de Partie – Japanese Restaurant (Pre-opening team - 5 days work)

Responsibilities:

  • Assist the Head Chef in daily operation
  • Ensure the food quality is up to required standard
  • Ensure all the orders for functions / events are properly followed
  • Compile and prepare recipes, to ensure standardized products can be followed and maintained
  • Maintain food cost within budget
  • Assist in supervising & training of kitchen staff
  • Ensure high standards of sanitation, cleanliness and safety are maintained throughout all kitchen areas at all times
  • Responsible for the quality of all food prepared in the kitchen under supervision

Requirements:

  • Certificate in food and beverage / hospitality management
  • Minimum 5 years’ experience in a well-established hotel / clubhouse
  • Knowledge of serving Kaiseki and Japanese cuisine is highly preferable
  • Good spoken English and Cantonese, knowledge in Japanese is highly preferred
  • Candidate with less experience will be considered as Chef de Partie
